Looking for something to wow at today's BBQ? I've got just the thing for you. Grilled chicken and veggie kabobs are pretty standard fare at most cookouts, but these stand out from the crowd, thanks to a secret spice weapon: za'atar.
If you're not familiar, za'atar is a Middle Eastern spice blend that combines sumac, thyme, and sesame seeds. The sumac gives the seasoning a tangy, lemony note, which complements the chicken perfectly.
When it comes time to assemble the kabobs, all you have to do is cut some boneless, skinless chicken breast, zucchini, and red onion into bite-sized pieces. You'll also quarter and then thinly slice a lemon. Put everything in a large bowl, toss with olive oil and the za'atar, and thread onto skewers (the author uses metal, but you can use wood if you soak them first). Then all you have to do is cook them until they've got a nice char on the outside, and are super tender throughout.
If you've got access to a grill, great! If not, you can still make these kabobs in a 400°F oven. And as far as serving goes, the author suggests pairing these with a creamy tahini dressing, which sounds absolutely divine.
