These Easy Chicken Tacos Come Together in 20 Minutes

Happy Taco Tuesday! If you’ve been making the same tacos every week, it’s time to switch things up. Worried about trying out a new recipe on a busy weeknight? Don’t be. These easy chicken tacos only take 20 minutes to prepare.

This recipe calls for a poblano pepper, which adds a mild heat, but the author notes that if you can’t find a fresh one, you can sub in a green bell pepper. To make the filling you simply sauté that poblano with onion and garlic before adding in ground chicken, spices, and tomato paste.

To make this a truly 20-minute meal, you’ll have to multitask a bit. Instead of warming each corn tortilla individually on the stovetop, just stack them together, wrap them in foil, and let them heat up in the oven while you’re making the chicken filling.

Then, when the chicken is ready and the tortillas are warm, you can bring everything to the table and let everyone assemble their own tacos. Don’t forget to set out all the toppings, like avocado, lime, salsa, and sour cream — that’s the best part!
