As the temperature starts to drop and the days get shorter, the desire for slow-cooked roasts and meaty braises may set in for many. But if you’re someone who follows a vegan or vegetarian diet, it doesn’t mean you don’t crave something a bit more comforting and rice than what you’ve been eating over the summer — it’s just that you want it without the meat.
