This 30-Minute Creamy Chicken Skillet Is a Weeknight Win

Since I write about food for a living, it's not really cool when I don't like a common ingredient. Other people can have preferences for what they do and don't like (as long as olives and pickles aren't on the "no" list, I'm sorry), but I'm "supposed" to eat everything.
This is why I used to keep my aversion to sun-dried tomatoes mostly under wraps. I ate them when I had to; I chewed through the leathery, sad versions that I found on pizza and salads and wondered why people put up with this overrated ingredient.
And then I went to Rome last October, and wow. After accidentally ordering something with sun-dried tomatoes again (oops), I realized that whatever "sun-dried tomatoes" I had before were sad excuses for the real deal. Good sun-dried tomatoes can transform a meal from average to special, and that's why they're my weeknight meal obsession.
So, let's get to this chicken dish I'm featuring today. This recipe is all about the sauce. As the blogger behind Creme de la Crumb says, "This rich, creamy, cheesy, sun-dried tomato, and garlic herb sauce is a big fat slice of heaven on earth." Basically, you take your average skillet chicken and bathe it in a sauce made out of garlic, sun-dried tomatoes, heavy cream, chicken broth, Italian seasoning, butter, and Parmesan cheese.
The sun-dried tomatoes are julienned for this recipe (or cut into thin strips). Creme de la Crumb notes that you should buy sun-dried tomatoes that are olive oil-packed because the oil preserves their bold flavor.
Without the sun-dried tomatoes, this recipe wouldn't be very special. It's a simple skillet meal that takes 30 minutes (which includes five minutes of prep). There's chicken and butter and a little seasoning. But the sun-dried tomatoes transform the dish into something exciting for dinner. It only takes one ingredient.
