October is hands-down my favorite month of the year and it has almost nothing to do with it being my birthday month. Nope, I love October for its gorgeous, cool weather, apple picking, and pumpkin carving. But I also underestimate how busy October can be.

We happen to be moving from our apartment to our new house this week, which means our fall-inspired dinners need to be fast and easy. Here's what I'm cooking this week to quickly feed my family and also celebrate the season.

Monday: Orzo with Caramelized Fall Vegetables & Ginger

This is everything I love about October produce in one dish — sweet potatoes, mushrooms, kale, and warming ginger. Plus it uses orzo, which cooks quickly.

Tuesday: Fast and Fancy Pork and Beans

A dinner recipe that's primarily bacon and canned beans is especially helpful when you might be moving, but add some crusty bread and a glass of wine and this humble meal is actually quite luxe.

Wednesday: Slow Cooker Honey Teriyaki Chicken

Full disclosure: We are totally eating teriyaki chicken from a takeout place near our new home because Wednesday is our biggest moving day. But you can get your teriyaki fix with this slow cooker version.

Here's how to pull off one of my favorite soups of all time on a busy weeknight: Buy broth and a rotisserie chicken at the grocery store (you've probably got eggs and a lemon at home), then cook this soup in as little as 15 minutes and devour it on the floor of your new house, because has anyone found screws for the dining room table yet?

I'm giving myself permission to order pizza delivery on Friday night, but if even that feels like too much effort, I've got some demi-baguettes in the freezer to make a mini-riff on these French bread pizzas too.
