Make This Creamy Chicken Soup in the Instant Pot

January, am I right? We all want the comfort that winter foods provide, while pretending that we’re sticking to our food resolutions. The struggle can be real when the weather feels unforgiving. Do they make blankets out of cream and carbs? Surely someone has discovered that by now.

Fine, I don’t need a carb blanket, but I do need this creamy chicken soup, which, as far as I’m concerned, is the next best thing. Oh, did I mention that it doesn’t have a bit of cream in it? Boom, baby! It’s like a cream blanket without the cream. And you can make this soup in the Instant Pot, which makes it even more enticing.

As if the weather hasn’t been bad enough across the country this year, cold and flu season has most of the country down in the dumps. Chicken soup is the standby classic, but when you yourself are down and out, you really don’t feel like cooking. Enter: the Instant Pot. Sure, it requires a few minutes, but that’s about all and then you’re set for the week’s worth of Kleenex, bad movies, and exhaustion.

This 10-minute soup (no, seriously, that’s all it takes to assemble and cook!) starts with a sauté of vegetables and herbs followed by the addition of chicken, rice, and stock. Five minutes in the Instant Pot and you’re set to add the cornstarch and cream cheese to the mixture. That’s it, folks. That’s seriously all it takes to have a week’s worth of warm comfort food when the world might feel like it’s coming down around you.
