French Onion Pasta Is the Best Thing You'll Eat This Week

A bowl of steaming-hot French onion soup is one of the most luxurious, comforting things you can eat. If you love French onion soup (and who doesn't?), you're definitely going to want to try this French onion pasta. It has all the flavors you'd expect from French onion soup, except it's all wrapped up in a rich, creamy pasta that's loaded with caramelized onions and stretchy melted cheese. Our mouths are watering too.

The great thing about this dish is that the whole meal is made in one pot. Caramelizing the onions is the most time-consuming part of the process, but it is absolutely worth it. Once they onions are caramelized, you add a bit of balsamic vinegar. Next you add the dried pasta to the pot with beef broth, heavy cream, and dried thyme and simmer it until the pasta is cooked and nicely tender. Most of the liquid will be absorbed by the pasta at that point, but that's the goal with this dish — it might be soup-inspired, but the end product is not soupy.

Once the pasta is cooked, you'll mix in shredded cheese and top the dish with extra cheese, then cook that in the oven until the cheese is nice and melted. At that point it should be full of nice, stretchy melted cheese and gorgeous caramelized onions, and people are going to love it.
