Marfalafel! Help Us Recreate Marfa’s Food Shark Specialty

We don’t talk much about eating out here on The Kitchn, but our visit to Marfa, Texas, yielded a lunch spot with a specialty we’ve got to recreate at home.

Our visit to Marfa was eye opening in terms of the town’s slow, artful pace and businesses’ short hours of operation. AT reader Tobermory asked for a lunch recommendation, and this is it! The Food Shark. There are only a handful of other restaurants in town (all of which your hotel or anyone on the street can tell you about), but the Food Shark was both delicious and convenient. It’s also extremely popular, so prepare for a hefty wait. And here is the one dish that we’ve just got to figure out: Marfalafel!

The Food Shark serves “marfalafel” —which we’d love to recreate at home. It’s based on a typical falafel, but served extra spicy (with lettuce and onion) in a flour tortilla rather than pita bread.

In addition to marfalafels, the Food Shark serves up a selection of daily sandwich, salad, and platter specials. Under a giant, covered pavilion, you place your order at the trailer’s window, then eat at long, wide, and beautifully designed communal picnic benches. It was community dining at its most relaxed, delicious, and fun.
