People Are Obsessed with These Cauliflower Pizzas at Costco
Cauliflower is the avocado of 2018. I don't know what it is about cauliflower that made us all become obsessed with it this year, but cauliflower is everywhere.
Maybe it was the first time we tried a cauliflower "steak" and realized cauliflower takes on other flavors well and has enough heft and bite to sit in the center of the plate and still feel like a meal, or maybe it's just the fact that it's so easy to hide in other foods to trick ourselves into eating more vegetables.
Whatever the case is, cauliflower is pretty great — especially when it's used to make a pizza crust.
The cauliflower crust pizza from Trader Joe's is so popular they've added cauliflower gnocchi, and they've even had to ration their cauliflower rice. And now two varieties of cauliflower crust pizza have been spotted in the Costco freezer section: a roasted vegetable and a Margherita four cheese version. Both are made by Milton's Craft Bakers, and they're both certified gluten-free.
According to PopSugar, the roasted vegetable version has 230 calories, 8 grams of fat, 27 grams of carbs, 2 grams of fiber, and 12 grams of protein per serving. The Margherita version is comparable, with 250 calories, 11 grams of fat, 26 grams of carbs, 2 grams of fiber, and 14 grams of protein. Both pizzas list a serving size as a quarter of the pie.
A pack of two pizzas weighs just over two pounds, and costs $14, or $7 per pizza. And so far, people have been raving about them.
"Had no idea Cauliflower Crust Pizza could be so delicious!!!" one Instagram user wrote.
"I loved it! Really crispy crust. Truly delicious. I plan on buying more!" another agreed.
A good gluten-free pizza crust is hard to find, and Costco seems to have a hit on their hands with these frozen cauliflower-crust pizzas.
