Chrissy Teigen Declared These the Best Pancakes in America
Chrissy Teigen is a supermodel, TV host, and the reigning queen of Twitter, and she's also an award-winning cookbook author with a second book on the way. She really knows her way around the kitchen, and if she says she's eating the best pancakes in America, she's probably right.
This week Chrissy Teigen ordered a stack of pancakes topped with an enormous pile of wild Maine blueberries at Clinton Street Baking Company in New York. She was so impressed she posted a shot of her meal to Snapchat.
"BEST PANCAKES IN AMERICA. CLINTON ST BAKERY NYC," she declared.
According to The Daily Meal, Teigen even brought a bottle of Aunt Jemima syrup in her purse, although the Clinton Street pancakes are served with the restaurant's signature maple butter instead.
Teigen is not the only person to sing the praises of those blueberry pancakes. New York Magazine named them the best pancakes in the city twice. The pancakes are shockingly light and fluffy, with a burnished, golden-brown surface that is deliciously crisp around the edges.
According to The Spruce, the secret to the Clinton Street Baking Company's famous pancakes is separating the eggs, mixing the yolks in with the batter normally, and then whipping the egg whites and gently folding them into the batter at the end. That makes the pancakes lighter, like a soufflé, but they still retain the springy resiliency that chef Neil Kleinberg says "makes for a proper pancake."
Chef Kleinberg also warns against over-mixing pancakes, which he says makes them tough. When mixed correctly, the batter should be slightly lumpy and have visible paths of not-quite-mixed-in whipped egg whites.
"It should look like whitecaps in the ocean with foam on top," Kleinberg's recipe explains.
Clinton Street Baking Company also has a cookbook that includes its famous pancake recipe, so if you can't get to the restaurant or don't want to wait in its very long lines, you could always try making Chrissy Teigen's favorite pancakes yourself.
